What would you replace the chicken with in chicken and dumplings?

I have been making broth with fluffy dumplings, but my other half won't eat it, I imagine because it's too plain. What would you replace the chicken with? Tofu just doesn't sound that good in it. I've also tried seitan and it was really gross to me.
